Mizeria – Polish Cucumber Salad

A great salad for anytime of the year, although particularly great for al fresco dining on hot days. Complements a number of dishes – try it with Roast ChickenBombay SpudsCoulibiak, Polish Salmon or Easy Salmon. Another recipe from my old Polish friend, Anya.

You can cut the cucumbers any shape or size you like. My favourite way is to make long, thin slices with a peeler.

 

Ingredients (serves 4)

 

very thinly sliced

 

1 cucumber

150ml soured cream

a quarter onion, green onion will blend in, red will stand out, it’s up to you

1 tbsp chopped fresh chives or dill

pinch of salt

dash of freshly ground black pepper

 

Method

 

 

1. Slice/Cut the cucumber the way you want it.

2. Thinly slice the onions.

3. Chop the chives into 1cm lengths.

4. Mix everything up and serve immediately.

It can be prepared up to an hour before, at the earliest as the cucumber will lose it texture.
