The course aims at teaching students not just the recipes but the principles behind creating each dish, the idea being that once you understand the concept of the authentic, traditional recipe, you can then go ahead and play around with it if you fancy! Cooking Italian for Beginners starts off with explaining what an antipasto is as I know many get confused by this word and its plural antipasti. We also make pesto from scratch, students in my cookery school are always amazed at how quick and easy pesto is to make at home!
