2012An offering to The Sun Gods

I’m pretty sure it’s July, which means it must be summer – right? Mmm… I don’t know about you folks in the other parts of the Northern Hemisphere, but here in the UK, we might be forgiven for thinking that we’re stuck in an autumnal time warp!
Never one to bemoan the weather, I find myself, however, joining in the doleful chorus echoing throughout the British Isles, despondently calling on Apollo, Helios, Arinna, Tonatiuh et al for some much needed warmth and light! Even this rain loving creature has had enough! Our back garden backs on to the River Stour with a golf course on the other side. About a week ago, we woke up to burst riverbanks and a completely flooded golf course – first time in the 4 years or so we’ve been here!
So, in a desperate attempt to appease the Gods, I am offering them a summer menu, simple yet tasty and colourful in the hope that this oblation will deliver us what we’ve all been waiting for – SUNSHINE!

One goes in the oven, the second on the stove and the third, in the fridge – easy, peasy, lemon squeezy, as my kids would say! So quick and simple, it hardly qualifies as cooking! Guaranteed, every time! If only we could say the same about our summer!

So funny that you are wishing for sunshine. Here in the midwest United States we are wishing for rain and cooler temperatures. I can’t remember the last time it rained or didn’t feel like the surface of the sun!

That looks delicious!! I can mess up even the simplest recipe (NO, Really- I screwed up break and bake cookies) So I will hand this one to my husband and pray he makes it.

Oh no! We on the Canadian East Coast often have the same weather woes as the UK. Every kind of weather you can imagine, and all in one day! Last summer was especially horrid. We’ve actually had decent weather this summer, though, and we’re all in such shock it’s the topic of every conversation… ha!
In any case, a beautiful menu to win the gods over! Such bright flavours and colours, and so many of my favourite ingredients! Must try your recipes!

I have been wearing tights much of July because the weather has been so cold and damp in Alaska. We had a burst of sunshine yesterday, though, so I will try to will some in your direction.
